Job description
OVERVIEW
The Food Service Manager will work in harmony with the total camp program, assuring the daily preparation of all meals and snacks in a manner that will make a positive contribution to the high standards of health nutrition and programming established for Camp Redwood Glen. They will live “On-Site” for the convenience of The Salvation Army for the purpose of fulfilling the obligations and responsibilities of the Food Service Manager
DUTIES
- Plan and develop menus and input into Megasys Software and confirm details with Guest Services Manager.
- Develop “Signature” meals for the camp menu.
- When scheduled to work- prepare, cook and serve meals.
- Prepare and process all food and supply orders for food service operation.
- Forecast and manage food service budget.
- Make work assignments and give direction to all kitchen staff.
- Ensure that all meals and snacks are prepared and delivered on time.
- In accordance with state and county health codes, properly store all leftovers and unused food after each mean.
- Maintain a high standard of cleanliness and sanitation in the kitchen at all items.
- Assist with and supervise the cleaning and care of all kitchen equipment in keeping with established health department standards.
- Ensure that all kitchen cleanup is completed immediately following each meal.
- Secure kitchen before leaving at the end of all scheduled events.
- Maintain inventory of kitchen supplies, equipment and food.
- Maintain U.S. Department of Agriculture Summer Food Service records as required.
- Maintain current certification in the following: First aid and CPR (adult & child); Santa Cruz County Serve Safe Food Manager Certification.
- Ensure that all food service personnel practice safe workplace habits. Make certain that deportment of all food service personnel is exemplary at all times.
- Consult with Executive Director (or designate at the beginning of each camp session to plan for any special events that will require food service.
- Act as liaison between kitchen and dining room staff.
- Attend bible studies and worship events as the schedule allows.
- Assist the Executive Director with other duties as required.
QUALIFICATIONS
- Some college, vocational training or comparable experience in the area of food service.
- Possess all food handler certification(s) as required by state and local law.

PHYSICAL REQUIREMENTS
- Ability to sit, walk, stand, bend, squat, climb, kneel and twist on an intermittent or sometimes continuous basis.
- Ability to grasp, push, pull objects such as files, file cabinet drawers, and reach overhead
- Ability to operate telephone
- Ability to lift up to 25 lbs.
