Job description
The dish and general utility position is responsible for maintaining cleanliness and sanitation standards for china, glassware, tableware, cooking utensils, etc., using machine and manual cleaning methods. This position also ensures the dishwashing area is maintained as a clean, safe and sanitary facility.
Essential Functions

Sort and rinse dirty dishes, glass, tableware and other cooking utensils and place them in racks to send through dish machine.
Sort and stack clean dishes. Carry clean dishes to cook’s line and other proper storage areas. Rewash soiled dishes before delivering.
Change dishwater in dish machine every hour.
Wash pots, pans and trays by hand.
Remove trash and garbage to dumpster.
Set up or break down dishwashing area.
Clean and roll/unroll mats.
Fill/empty soak tubs with cleaning/sanitizing solutions.
Sweep/mop floors.
Assemble/disassemble dish machine.
Sweep up trash around exterior of restaurant and garbage dumpster.
Conduct general restaurant and restroom cleaning as directed.
Wipe up any spills to ensure kitchen floors remain dry.
Notify manager any time dish machine wash or rinse cycle falls below safety standard temperatures.
Do not touch dirty dishes before touching clean dishes without washing hands first.
Other duties as directed.

Work Environment
This job operates in a kitchen environment. This role routinely uses sinks and dishwashers and tools to clean kitchen appliances. Employees in this role are frequently exposed to hot water, potentially slippery floors, garbage disposals and cleaning chemicals.

Summary/Objective
The prep cook is responsible for preparing and/or directing the preparation of food to be served, complying with all applicable sanitation, health and personal hygiene standards and following established food production programs and procedures. The prep cook is responsible for appropriate use of facility supplies and equipment to minimize loss, waste and fraud.

Prepares or directs preparation of food served using established production procedures and systems.Determines amount and type of food and supplies required using production systems.
Ensures availability of supplies and food or approved substitutions in adequate time for preparation.
Complies with established sanitation standards, personal hygiene and health standards. Observes proper food preparation and handling techniques.
Stores food properly and safely, marking the date and item.
Reports necessary equipment repair and maintenance to supervisor.
Correctly prepares all food served following standard recipes and special diet orders.
Plans food production to coordinate with meal serving hours so that excellence, quality, temperature and appearance of food are preserved.
Apportions food for serving.
Maintains daily production records.
Keeps work area neat and clean at all times; cleans and maintains equipment used in food preparation.
Completes food temperature checks before service.
Manages prep based on volume, rotation and safety standards.li>

Must have basic culinary knowledge

This is a full-time position. Days and hours of work vary based on need. Frequent evening and weekend work is required.
