Homeowners Association in Bear Valley Springs/Tehachapi area is seeking a Food and Beverage Director responsible for all food and beverage production and service for the Association.

Qualifications/Requirements:

  • Excellent customer service skills
  • 5+ years hands on restaurant management
  • Experience in both front and back end restaurant operations
  • Strong, proven supervisory skills
  • Current State of California Food Safety Certification
  • Willing to work flexible hours as determined by the duties.

Essential Functions/Key Responsibilities:

1. Plan, direct and supervise the BVSA food operations including the main dining room, saloon, reception room, Mulligan Room and pool snack bar.

2. Program planning, conducting activities and organizing food and beverage service for special event and banquets.

3. Ensure smooth operations and high level of customer service.

4. Establish effective orientation and training for staff with emphasis on customer service.

5. Maintain balanced staffing and scheduling strategies to meet business needs.

6. Maintain high visibility to customers during hours of service by greeting and listening to customers’ comments and needs.

7. Maintain appearance, upkeep, cleanliness and organization of all F & B facilities.

8. Develop and make recommendations for current and long-range plans and procedures for effectively meeting objectives of the club and its satellite facilities. Implement these plans and procedures.

9. Plans, directs and supervises the Club operations including the main dining room, saloon, storeroom, kitchen operation, cashiers and the catering service.

10. Will assume direct personal responsibility for food and beverage preparation and service, purchasing and/or maintenance of adequate food and beverage stock, and the control and accounting of all funds generated from all sources.

11. Recommend to General Manager, plans and policies to guide in scheduling activities.

12. Program planning, provision of entertainment, planning and conducting activities, and organizing food and beverage service.

13. Plans and directs the purchase of equipment, maintenance and supplies required for all activities of the Club.

14. Consolidates annual and monthly budgets and inputs to General Manager. Assist the General Manager in review and coordination with the Accounting Office.

15. Ensures proper maintenance of Club facility and property.

16. Maintains cooperative and coordinative relationships with such agencies as the Community Services District, all social clubs and other departments of the Association.

17. Develops operating budget for each F & B department and venues; monitors and takes corrective action as necessary to assure that budget goals are attained.

18. Establishes effective orientation and training for any new F & B staff, maintains ongoing development of existing personnel via evaluations, continuing interaction and the getting of goals.

19. Ensures that all standard operating procedures for revenue and cost control are in place and consistently utilized.

a. Takes weekly inventories and generates weekly COG for food and beverage.

b. Monitors labor costs daily, weekly and for pay periods.

c. Approves and codes all supplier invoices before submitting to Accounting.

d. Certifies month-end inventory and submits to Accounting by 1st of following month.

e. Responsible for maintaining realistic inventory levels to optimize club cash flow, keep storage orderly and minimize waste.

f. Maintains POS and accurate daily sales reports; reconciles errors.

g. Keeps historical records of special events and day-to-day business for purposes of educated forecasts.

h. Audits payroll at least monthly.

20. Inspects to ensure that all safety, sanitation, energy management and preventive maintenance plans are in continual use.

21. Helps plan and approves external and internal marketing and sales promotion activities for building F & B business.

22. Structures the F & B organizational chart for maximum effectiveness. Maintains balanced staffing and scheduling strategies to meet business needs.

23. Defines job descriptions for all subordinate F & B positions.

24. Reviews menus and accompanying prices and margins proposed by the Culinary Director for all venues and special events.

25. Sees that all legal requirements are adhered to including wage and hour issues, federal, state and local laws governing alcoholic beverages, and health department issues.

26. Researches new products and works with Culinary Director in developing menu trends and variety to satisfy customer interests in cuisine.

27. Maintains current and comprehensive employee files.

28. Develops and enforces policies and procedures for F & B department.

29. Monitors purchasing and receiving procedures for products and supplies to meet guidelines set for quality and pricing.

30. Maintains open communications with above mentioned subordinates via weekly management meetings and daily conversation.

31. Maintains high visibility at the dining facilities by greeting and listening to customers’ comments and needs.

32. Addresses customer complaints personally while keeping General Manager informed.

33. Maintains appearance, upkeep, cleanliness and organization of all F & B facilities.

34. Monitors employee dress codes according to Handbook.

35. Auditions and approves all entertainment.

36. Ensures smooth operations and high level of customer service during hours of service.

This position is a full-time management-exempt position. Position is eligible for health, dental, vision, life insurance and 401k Plan. Employees receive access to all Country Club Amenities; including equestrian, fishing, golf, gym, restaurants, swimming and more.
