Responsibilities for head cook
- Maintain proper sanitation and safety of equipment operations and cleaning
- Must be trained to safely operate all kitchen equipment (choppers, slicers, ovens, steamers, a variety of knives)
- Understand and utilize a variety of equipment and service standards as appropriate
- Inspect supplies, equipment, and work areas for cleanliness and functionality
- Inspect supplies, equipment and work areas to ensure safety to policy standards
- Delegate and assist with the setup and breakdown of production and service areas
- Follow and enforce set food safety protocol in all areas of oversight
- Ensure cleanliness and quality of all BOH service areas
- Practice and ensure ServSafe principles are followed
- Prep, assemble and delegate food preparation tasks
Education for Head Cook a relevant degree such as bachelor’s and Associate Degree in Culinary, Education, Culinary Arts, Technical,
Economic Development, Faculty, or 3+ on the job experience.
Skills for Head Cook
Skills for Head Cook Desired experience for head cook includes:
Equipment Knowledge Servsafe certified and or certificate appropriate for the position level or the
Food service positions ability to obtain Servsafe certification or
Food service production certificate appropriate to position level within 6 months of hire.
High volume food production
- Successfully pass ServSafe
Supervisory techniques in this field
- Ability to well under pressure
Ability to conform to sanitation and safe food handling practices. *Ability to work well in a team driven environment.
Buffet serving*
Cleaning
Current health and safety laws and practices related to food service.
