Job Summary:

The Stewarding Supervisor assists management in hiring, training, evaluating, counseling, motivating and coaching employees. Develop and maintain positive working relationships with others and support team to reach common goals resort wide. Ensure adherence to expectations and company standards. Oversee and participate in the cleaning, maintenance, and sanitation of china, glass, silver, kitchen equipment and kitchen production areas in accordance with production requirements and company standards while maintaining a safe work environment. Assist and help manage special event functions such as AT&T Pro-Am, Concours d’Elegance, Food & Wine, Pure Insurance, U.S. Women’s Open and the U.S. Open.

Essential Duties & Responsibilities:

  • Lead and supervise the AM/PM Stewarding team in all aspects of the Stewarding department and ensure standards are followed.
  • Tour areas of responsibilities at least 2-4 times daily (The Bench, Gallery Café, Hay’s Place and all Stewarding areas)
  • Assist in developing and implementing training programs for new and current Stewards to ensure that they can perform their duties safely and effectively.
  • Supervising staff to include monitoring their performance and providing feedback to Executive Steward.
  • Train all line staff on proper safety procedures. Include proper lifting techniques, bailer, dish machine usage, floor scrubbing machine use, and temperature gauge reading on dish machines, chemical usage and proper PPE.
  • Maintain a high level of productivity from the line staff. Maintain line staff busy at all times with cleaning the kitchen areas and following through on the work. Always inspect the work and give feedback.
  • Maintain a clean and organized workstation in all outlets and throughout the kitchens.
  • Complete all banquet function requisitions. Assure all china, glass and silver is delivered to the proper location two hours prior to the start of the shift.
  • Check all banquet requisition items are clean and sanitized. Assure the hollowware (chafers, heat lamps etc) are in good working order.
  • Check BEO for food delivery times. Check with the Banquet Chef to assure food delivery smooth. Handle with care. All food must be delivered two hours prior.
  • Check all equipment (Flat top, fryers, grills, ice cream freezers, convection ovens, satellite cooling systems, etc) to assure its working properly.
  • Assist with pick up of food cabinets from locations during banquet events.
  • Gather all equipment (Flat top, fryer, grills, satellite cooling system, etc.) from location to ensure its removed safely.
  • Transport all silver items to their proper location utilizing good handling procedures. Store all items in an organized manner. Handle with care as items are very valuable.
  • Assist with the inventory of all china, glass and silver in all areas. Include all operating equipment.
  • Identify cleaning projects and assign tasks to the line staff accordingly. Give line staff a time frame to complete the task and follow through, and check to assure the task is completed properly.
  • Maintain a clean and safe loading dock area. Remove all unnecessary equipment for proper safety. Check for cleanliness and organization daily.
  • Maintain inventory of all chemicals in their proper storage areas and organized. Ensure proper labeling of all bottles. Keep Material Safety Data sheets updated.
  • Assist all culinary crew employees when needed with transport of food or equipment and also assist the culinary team when plating up banquet functions.
  • Ensure the Kronos break schedules are followed accordingly. This to include all breaks and lunch periods.
  • Knowledge of locations throughout the property. Sombria Court, Founders, The Grand Tasting Tent, The Monterey Bay Aquarium, and all storage areas etc.
  • Work off-property functions when needed.
  • Operate a lift gate truck to assist with transporting of food and equipment.
  • Operate the Green Machine (Ez Go Cart) to transport food to location. Assure all cabinets are secure tightly before moving. Assure ramp is in place and secure. Give yourself enough room for ram to unfold for loading and unloading of food cabinets.
  • Teamwork - always assist all co-workers when in need of your assistance.
  • Comply with all Pebble Beach Company safety and health policies and procedures.

Absolutely Required Skills:

  • Ability to understand and follow instructions.
  • Communicate openly and clearly with all co-workers and Stewarding management team.
  • Knowledge of sanitation requirements and good organizational skills.
  • Able to lift and move heavy items on request.

Physical Requirements:

Ability to stand for long periods of time and move frequently from area to area. Ability to bend, stoop, crouch, and reach with hands and arms. Regularly lift and/or move up to 15 pounds and occasionally lift and/or move up to 40 pounds. Repetitive hand use and exposure to chemicals as well as hazardous materials required.
