Job Summary

The Hemingway’s Assistant Kitchen Manager (AKM) actively works in all departments of the restaurant with the kitchen operations being the primary responsibility. The Assistant Kitchen Manager is responsible for helping the Chef overseeing food and beverage ordering, food preparation, ordering supplies, and monitoring inventory levels. The AKM leads with kitchen recruiting, training, retaining, weekly kitchen schedules, equipment maintenance and planning.


Duties and Responsibilities

Manage People

  • Ensure successful onboarding and training of new hires.
  • Maintain adequate staffing levels to deliver Hemingway’s high quality food while meeting financial goals.
  • Develop a high functioning kitchen team.
  • Coaching kitchen staff by maintaining positive morale.
  • Ensures staff is trained on all food quality, food preparation, and plate presentation to meet Hemingway’s standards.
  • Effectively communicate with kitchen, front of house, and managers using the Portal and shift meetings.
  • Performs other related duties as assigned.
  • Collaborate and assist chef and Food & Beverage Director with new menu rollout and kitchen systems.


Manage Food, Safety, and Supplies

  • Builds and develops systems and checklist for optimizing kitchen performance.
  • Organize and direct kitchen staff to maintain a clean, sanitized, and organized facility (Daily and weekly checklist).
  • Maintain proper safety standards in the kitchen area.
  • Ensures successful line checks are completed daily.
  • Ensures inventory and line levels are maintained and adjusted according to weekly and seasonal business needs.
  • Ensures Kitchen CATS (Check Adherence to Training Standards) are met.
  • Ensures accurate period inventories are completed.
  • Meets food cost expectations.
  • All food products are stored in compliance with health and safety regulations.
  • Maintain and order food supplies and kitchen equipment, as needed.
  • Strong understanding of KDS system.

Qualifications

  • High School Diploma or equivalent
  • Proficient in Microsoft Office/ Excel and/or Google sheets
  • Must be able to communicate clearly with managers, kitchen, front of house staff and
guests.
  • Proficient at line checks
  • Understand management bonus structure and how your decisions and actions affect it.
  • Previous Restaurant Supervisory, Management, or Leadership experience
  • Food Handler certification
  • Must have flexible and open availability
  • Ability to direct, support, and drive excellence
  • Ability to maintain all kitchen standards
  • Highly motivated and organized.
