Essential Job Responsibilities and Duties:

  • Gathers bus tubs from kitchen line as necessary
  • Responsible for keeping all equipment, utensils, and containers clean and ready for use
  • Cleans floors, walls, wash tubs, counters, and shelves; cleans mop sink area
  • Properly disposes of grease and garbage left in pots and pans
  • Defrosts and clean refrigerators and iceboxes as necessary
  • Dumps and cleans the garbage cans and rolling bins
  • Stocks serving stations with dishes and utensils
  • Keeps all work areas free of trash, clean and organized
  • Responsible for maintaining a clean, organized, and sanitized work area all while following all county, city, state and federal health/food safety regulations and codes
  • Responsible for making sure that all areas of their assigned venue/outlet/kitchen are taken care of, and all assigned duties are completed
  • Responsible for all equipment, tools, floors, workstations, and food prep areas are kept clean and organized, as well as free from all clutter, trash, and non-approved items
  • Ability to understand and follow through with all assigned task
  • Ability to clearly communicate with Steward Manager
  • Loads full dishracks on belt and ensures correct placement in accordance with the instructions for the operation of the machine. Operates automatic dish washing machine by using controls as instructed
  • Loads dishwashing solutions into automatic dispensers and regulates the output of detergents and chemicals to the dishwashing machine by monitoring and adjusting controls
  • Unloads clean dishes from racks after being processed through dish machine, inspects for cleanliness, and carefully stacks in specified carts and shelves for the easy use by restaurant and kitchen staff
  • Manually scrubs pots, pans and other kitchen equipment that cannot be washed automatically, using detergents, scourers, and special solutions as required. Inspects for cleanliness, manually dries with hand towels, and puts away in correct places
  • Maintains the automatic dishwashing equipment in good condition and working order in accordance with manufacturers' instructions in order to prolong the life of the equipment, prevent breakdowns and to meet mandated health compliance regulations
  • Always keeps the dish room in clean and orderly condition by sweeping, mopping, emptying trash, wiping counters and equipment, and organizing shelves in order to maintain a sanitary workstation and to meet mandated health compliance requirements
  • Gathers all trash cans and rolling bins from kitchen work areas as necessary and at end of each shift and empties into outside trash compactor
  • Gathers all cardboard from kitchen work areas as necessary and at end of each shift and empties into outside trash compactor
  • Responsible for cleaning all back of the house areas, including kitchen, restaurant, food storage and trash handling areas
  • Performs general weekly or monthly maintenance as deemed necessary by kitchen management
  • Assists with back of the house supply and clean up as needed

Skills, Education and Other Requirements

  • Basic Reading and Writing skills
  • Ability to follow written and oral instructions
  • High School Diploma or Equivalent Work Experience
  • Six months experience as a dishwasher
  • Identification that establishes identity
  • Identification that establishes the right to work in the Unit in the United States
