JOB DESCRIPTION:
Our college fraternity is seeking a full-time chef to serve weekday lunch and dinner meals to ~25 of our members during Carnegie Mellon's academic year (~30 weeks/year). Responsibilities include cooking meals, acquiring food for meals, determining the menu, and coordinating with chapter leadership. We are looking for someone to start work in the Fall (late August) of 2023 and work in our in-house commercial kitchen, under an initial contract of 1 year with an opportunity for renewal.
Qualified candidates are capable of working independently, have some experience working in a commercial kitchen (including having the necessary certifications), can demonstrate flexibility, and are good with meal budgeting. Preferred candidates have experience purchasing food via Restaurant Depot or a similar vendor, have experience serving a predominantly young-adult clientele, have experience working with younger or hands-off management, and/or express willingness to commit to the position for multiple years.

Additional details:
- Calendar: Work will be in accordance with the Carnegie Mellon University academic calendar. Thus, we are looking for someone to work from late August to mid December and again from late January to early May (roughly 30 weeks per year). You would not be required to work during CMU’s semesterly breaks or Thanksgiving, thus providing time off during the semester. Compensation for employment is a salary for each academic semester with payments on alternating weeks.
- Schedule: Candidates should expect to work in our fraternity's commercial kitchen from 9:30 am to 6:00 pm, Monday through Friday. In addition, the chef will be expected to purchase food for meals on their own schedule whether it be during expected hours or outside of. Specific hours and total time worked is flexible, provided the required work gets done. Meals are tentatively scheduled for 11:30 am lunch and 5:30 pm dinner. Lunch would require the chef to plate the meal or make it self-serve. Approximately two members on “waiter session” will be present at all dinners to serve food to the chapter which you would help plate out. These “waiters” will also clean dishes and a majority of the kitchen, with your supervision.
- Cooking Environment: We have a fully equipped commercial kitchen. You would be expected to clean up cooking equipment used during the day prior to leaving as well as clean any dishes left out from the night before. Dining room cleanup is taken care of jointly by members and university-provided maintenance, you will not be responsible for this. The candidate should be willing to interact with young adults throughout the day whilst performing their work.
- Food Expectations: Food served should appeal to young adults, fit within a weekly budget, and accommodate dietary restrictions (if necessary). In terms of quality, our members are fairly low-maintenance and menus would be almost entirely to the chef’s discretion. Of course, each candidate should be open to suggestions and to work to provide members with meals that are generally enjoyed. Additionally, special events may require larger portions of food to be cooked and/or particular meals on specific days.
- Administrative: Once hired, candidates must have all of the certifications required by local/state government and Carnegie Mellon University. This includes passing an appropriate background check and having an up-to-date "nationally recognized food manager certification", such as ServSafe. Worker's Compensation coverage will be provided in compliance with government and university standards.
- Training and Onboarding: This candidate should have experience working in a commercial kitchen environment such that training on equipment would be minimal. However, we will work to support you with advice from our former chef and anything we can to make this an easy transition.
