Job description
The primary purpose of your position is to plan, organize, develop and direct the overall operation of the dietary department in accordance with current federal, state, and local standards, guidelines and regulations governing the facility, and as may be directed by the Administrator to assure that quality nutritional services are provided on a daily basis and that the dietary department is maintained in a clean, safe and sanitary manner.

QUALIFICATIONS

Education

Must possess, as a minimum, a high school diploma.

Certified Dietary Services Supervisor – form state approved program.

Experience

Two years experience in a supervisory capacity in a hospital, skilled nursing facility or other related medical facility.

Training in cost control, food management, diet therapy, etc., and hands on productions and documentation.

Knowledge of and experience with compliance management of Title 22 and OBRA regulations.

Skills

Able to read, write, speak, and understand the English language.

Ability to make independent decisions when circumstances warrant such action.

Good interpersonal skills, able to interact appropriately with residents, visitors, and personnel.

Knowledge of dietary practices and procedures.

Leadership ability.

Good organizational skills.

Able to adequately perform physical requirements of position.

SPECIFIC JOB FUNCTIONS

General

Supervises the operation of the dietary department daily to assure quality meal preparation, menu and diet compliance.

Interviews resident or family members to obtain diet history, as well as initial screening of all new admissions.

Completes initial assessment of all new residents in cooperation with Registered Dietitian.

Completes quarterly and annual evaluations, including MDS according to schedule.

Assures dietary progress notes are timely, accurate, informative, and legible.

Works in cooperation with registered dietcian to develop list of residents with dietary needs, high risk, etc.

Works in cooperation with other members of the interdisciplinary team to develop a comprehensive care plan to meet each individual resident’s need.

Assures resident likes and dislikes are properly recorded and communicated to others.

Maintains proper inventory of supplies, equipment, and food items through regular purchasing.

Assures proper storage of all food and supplies.

Schedules dietary staff in accordance with facility budget.

Visits residents periodically to evaluate the quality of meals served, review likes and dislikes, etc.

Ensures that residents are offered a nourishing snack at bedtime.

Participates in various meetings that are resident focused (weight variance, RNA meals, etc.) as directed by administration.

Management

Assists in developing and maintaining dietary policies and procedures.

Maintains department records that are accurate, current, organized and secure.

Coordinates and conducts regular in-service meetings and training programs for department staff monthly.

Participates in nursing in-service education at least annually.

Plan staff and special function menus as directed by the administrator.

Completes evaluations for department staff accurately and on time.

Participates in regular department managers meetings.

Rotates as Weekend Manager.

Disaster /
Emergency

Responsibilities before disaster/emergency

Conduct continuing education to ensure that all staff become familiar with the Disaster & Emergency Management Guidelines.

Ensure that staff from all shifts actively participates in drills and post-drill evaluations.

Familiarize all staff in their department with facility layout and the location, operation, and use of the following: a) exits; b) fire fighting appliances (fire sprinklers, fire hoses, fire extinguishers); c) fire alarm devices (fire alarm boxes, smoke and heat detectors); d) fire alarm enunciator panel; e) fire alarm control panel; f) fire and/or smoke barrier doors; g) utility shutoffs (main and auxiliary);
h) fire sprinkler shutoff and tamper switch alarm; i) oxygen location and manifold shutoffs; j) air circulating system; k) generator; and l) elevator.

Pre-plan for disruption, expansion of services, earthquake, or any emergency.

Require staff to know the room number and bed location of residents with special problems (i.e. deaf/blind).

Conduct fire prevention inspections at frequent intervals and report all fire and life hazards without delay.

During his/her absence, the supervisor assumes the duties and responsibilities of the Administrator.

Provide and prepare food as necessary for residents, staff, and any others as instructed.

Assist as instructed during any disaster and emergency.


Responsibilities in disaster/emergency

In the event of a disaster/emergency, the Dietary Services Supervisor is responsible for providing food and beverages to residents, staff, and disaster volunteers including: a) resident meal preparation and delivery to the designated areas;
b) distribution of bottled water to the nursing stations if needed; c) implementing the emergency menu, if indicated; d) establishing food and beverage stations for staff and disaster volunteers; e) dispersing and rationing emergency food stores, supplies, and water, if indicated; f) contacting vendors and activating emergency deliveries of food, supplies, and water, if indicated; and g) maintaining a clean and sanitary kitchen and serving areas.

The Clinical Dietitian, Cooks, and Dietary Aides report to the Dietary Services Supervisor for task assignments.

Quality Improvement

Demonstrates knowledge of Quality Assurance program through application of principles in departmental operations.

Actively supports the facility QAA/CQI activities.

Actively participates in departmental QAA/CQI activities.
