WE LOVE OUR WORK.:
  • Oversees the operations of the Food & Beverage, Security, Facilities, and Environmental Services (EVS) functions
  • Develops and implements goals for the F&B, Security, Facilities, and EVS departments
  • Develops and monitors the operating budget for the F&B, Security, Facilities, and EVS departments
  • Develops people to provide exceptional service, products and value to ourguests while maximizing profitability
  • Able to think strategically and operationally about factors such as: pricing, quality, marketing, price/value perceptions, customer satisfaction, employee training and development as they relate to areas of oversight
  • Able to develop financial, business and capital expenditure plans that are consistent with the overall strategic positioning of the property
  • Ensures that the receiving, holding and issuance of products are within the quality and control standards
  • Assist in designing and engineering menus
  • Implements and audits inventory and cost control systems and procedures
  • Enforces all regulatory, internal controls, policies and procedures for compliance
  • Develops programs to enhance the protection of assets, reduce company liability, and provides a clean customer environment.
  • Ensures that company operations are conducted in compliance with federal, state, and local law, including state gaming regulations.
  • Conducts investigations of criminal activity.
  • Provides a high level of customer service and promoting a positive attitude to create a fun and entertaining experience for our guests and team members
  • Ensures consistency in departmental policies and procedures for the property
  • Evaluates activities affecting integrity and liability issues and modifies internal controls, policies, or procedures to remedy the problem
  • Reviews activity reports to monitor performance of respective functions
  • Collaborates with other department heads formally and informally to ensure efficient and effective procedures are being utilize
  • Proposes capital improvements
  • Monitors team member and guest claims; ensures all procedures facilitate the investigation and administration of the claims to minimize the company’s exposure
  • Monitors the safety programs and makes proposals to minimize the physical risks to our team members and guests
  • Develops and maintains a close working relationship with the enforcement arm of our regulators
  • Ensures that company cleanliness standards are maintained by the Housekeeping and Facilities departments
  • Keeps abreast of products to improve quality standards and/or efficiencies
  • Conducts inspections of the facilities and indicates areas for improvement.
  • Ensures the key company personnel are aware of all major integrity/liability issues
  • Other duties as assigned

QUALIFICATION REQUIREMENTS

  • Bachelor’s degree (B.A./B.S.) from an accredited four year college or university or equivalent; or a combination of education and F&B experience.
  • Minimum of five years previous F&B experience at manager level or higher required.
  • Must have the ability to interact with guests, staff and colleagues and resolve problems and conflicts in a diplomatic and tactful manner.
  • Ability to write reports, business correspondence, and procedure manuals.
  • Must be proficient in all Microsoft applications and be knowledgeable in all Food & Beverage software systems.
  • Ability to effectively present information and respond to questions from groups of managers, clients, customers, and the general public.
  • Able to think strategically and operationally about factors such as: pricing, quality, marketing, price/value perceptions, customer satisfaction, employee training and development as they relate to overall Food & Beverage products.
  • Delegation, negotiation and diplomacy skills required.
  • Flexible to work all shifts including holidays, nights, weekends, and overtime as business needs dictate.
  • Must have extensive knowledge of food cost and labor analysis.
  • Knowledge of all phases of Food & Beverage administration, cost control and familiarity of all food and beverage services is required.
SUPERVISORY RESPONSIBILITIES
This job has supervisory responsibilities.
  • Responsible for staff development and training programs.
  • Responsible for rewards and recognition program to maximize employee engagement.
  • Evaluates team members within department and delivers constructive feedback to employees in regards to performance.
  • Determines recommendation for staffing (including interviewing and hiring) and scheduling (planning, assigning and directing work) to meet business needs.
  • Determines work procedures and expedites workflow.
  • Responsible for employee performance (disciplining, coaching, counseling).
CERTIFICATES, LICENSES, REGISTRATIONS:
Must qualify for a license with the Maryland State Lottery Agency and meet any credentialing requirements of the Maryland Gaming Control Board.

They must possess Serv-Safe or equivalent certification, with a comprehensive understanding of all food safety and sanitation requirements. Must be able to obtain a Responsible Alcohol Training certification. Must be able to obtain proper Food Handler Certification.

LANGUAGE SKILLS
Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence. Ability to communicate effectively and diplomatically with executives, visitors, fellow employees, and the general public.

MATHEMATICAL SKILLS
Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate and percent.

COMPUTER SKILLS
To perform this job successfully, an individual should have proficient skills in using Microsoft Office
products, specifically, Word, Excel, PowerPoint, Outlook and Lotus Organizer, and be comfortable searching and retrieving information from the Internet.

REASONING ABILITY
Ability to solve practical problems and deal with a variety of concrete variables in situations where only
limited standardization exists. Ability to interpret a variety of instructions furnished in written, oral or schedule form.
